Ops to Props: The Business of Running a Profitable Restaurant

Join us for our second year of Ops to Props, an intensive eight week training course for experienced restaurant professionals developed and facilitated by staff and curriculum from Grand Valley State University’s Department for Hospitality and Tourism Management and Colors Restaurant / ROC United.
This interactive training course is intended for owner-operators, front/back of house managers and other key management staff of both small and large independently owned restaurants, diners, cafes and bistros.
This comprehensive curriculum is intended to drive profitability through emphasis on:
• Staff Retention, HR Practices and Organizational Development
• Food and Beverage Accounting: Industry Benchmarks and Profit Margins
• Standard Operating Procedures and Systems
• Key Marketing Initiatives for Food and Beverage Establishments
Course participants will also be exposed to ROC United’s flagship program RAISE (Restaurants Advancing Industry Standards in Employment), which encourages restaurant owners to create and maintain sustainable business practices for employees and consumers while boosting their bottom line.
Upon successful completion of the Ops to Props training course, participants will receive a Certificate in Food and Beverage Management from Grand Valley State University’s Department for Hospitality and Tourism Management.
